Polka Dot Cupcakes

These polka dot cupcakes are perfect for children’s parties, bake sales or just for impressing your friends and family at a picnic or party. Because of the beautiful polka dot design, they won’t need to be frosted which makes them the perfect treat for littler ones or those who want a treat that isn’t too naughty!!

YOU WILL NEED

2 cups all-purpose flour

2 teaspoons baking powder

¾ teaspoon salt

1 cup sugar

½ cup butter

3 large eggs (whites only)

2 teaspoons vanilla

⅔ cup milk

Food colouring of your choice

DIRECTIONS

Heat your oven to 180C and line 9 muffin pans with paper baking cups.

Combine flour, baking powder and salt in a bowl.

Place 1 cup sugar and butter in a separate bowl and mix until creamy, add your eggs and vanilla and beat until well mixed.

Add your flour mixture and milk alternately, beating softly until mixed.

Reserve a small amount of your batter and tint with the food colouring of your choice.

Spoon your untinted batter into your baking cups.

Place your tinted batter into a pastry bag fitted with a round tip (or snip one corner of a freezer-bag).

Pipe small polka dots onto your plain cupcake batter.

Bake for 18-22 minutes or until a toothpick inserted in the centre of a cake comes out with moist crumbs.

Allow the cakes to cool completely and devour!
